This is the best and easiest recipe for Mediterranean tuna salad you've ever tried. The salad is packed with veggies that can be found all year round, and it has the most delicious lemon mustard dressing.

Ingredients

  • 2 cans of tuna
  • 80 g 1/2 cup cooked peas
  • 1/4 cup cooked corn
  • 2 cups lettuce
  • 2 medium tomatoes
  • 1 cucumber
  • 1/2 cup kalamata olives
  • 1 shallot

Dressing:

  • 4-5 tbsp olive oil
  • 4 tbsp freshly squeezed lemon juice
  • 1 + 1/2 tsp dijon mustard
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions

  • Dice all the veggies into medium bite-sized pieces.
  • In a large bowl, combine the tomatoes, cucumber, lettuce, diced shallot, peas and corn, olives, and tuna.
  • In an airtight container or a jar, add all of the ingredients for the dressing. Close the lid tightly and shake until everything is well combined.
  • Drizzle the dressing over the salad mix and serve.

Notes

  • If you don't have a jar or airtight container for the dressing, you can mix it in anything that has a lid or whisk it well with a whisk. 
  • You can use either canned or frozen peas and corn.
