Chocolate Banana Pudding Cups

Layers of vanilla cream, ground biscuits, banana, whipping cream, and homemade chocolate ganache assembled into pudding cups/parfaits.

Ingredients

vanilla pudding:

  • 1/2 cup vanilla pudding mix
  • 500 g / 2 cups full-fat milk add milk as much as it says on the pudding mix pack
  • 4 tbsp sugar
  • 50 g 1.5oz unsalted butter

chocolate ganache:

  • 50g chocolate
  • 50g whipping cream

other ingredients:

  • 1 banana
  • 1 tbsp lemon juice for drizzling over the banana slices
  • 120 g / 1 cup heavy cream for decoration on top of the cups
  • 100 g / 1cup lotus biscuits

Instructions

Vanilla pudding:

  • Prepare the pudding just like it says on the pudding on the pudding bag, plus add the sugar to the milk along with the powder.
  • Once the pudding is ready add the butter and mix whisk a whisk until fully incorporated with the pudding. Cover the pudding with plastic foil and let it sit while you prepare the rest of the ingredients.

Chocolate ganache:

  • Add the whipping cream and the chocolate in a medium bowl and microwave them for around 20 seconds, then take it out and mix with a spoon or whisk until smooth and creamy. Set aside

Combine:

  • Add the biscuits to a ziplock bag and crumb them using a rolling pin. In a separate bowl, whip the rest of the heavy cream to add on top of the parfaits.
  • Cut the banana into coins and squeeze the lemon juice over the top, so the banana doesn't brown.
  • In the cups, first add the pudding, then a layer of banana, and then a layer of ground biscuits.
  • Top the biscuits with the chocolate ganache. Continue with another layer of vanilla pudding. Again add a layer of banana and then a layer of ground biscuits.
  • And finally, on top, add the whipping cream and the leftovers of the ground biscuits for decoration.
  • Let them come to room temperature, then cover the cups with plastic foil and chill in the refrigerator for 4-5 hours or overnight.
